Blogging Break

Hello Everyone,

I’m having to take a blogging break for a little while, I have received a shock on Wednesday when I came back from the hospital.  The shock is still coming out and you’ll forgive me if I don’t go into details as I haven’t quite come to terms with it yet.

Suffice to stay I remain positive and will continue making cakes and bakes and when strength allows coconut ice.  Please don’t be alarmed as I know many of you will, I’m okay but will reveal more at a later date.

I feel blessed and humbled to have so many caring and loving friends and family.

There is the small matter of the Night to Remember Midnight Walk which I’m hoping to do and raise funds for Chestnut Tree House in Arundel and also to be a Superstar. I would be thrilled to be a Superstar this year.

Hello Everyone, a charity worth supporting and I’m raising funds for.

First of all, the above 4 T shirt’s represent the local charity Chestnut Tree House in Sussex, where in May 2010 there was the first Night to Remember Midnight Walk of 10 miles, which I completed in 3 hours. I have now completed 4 and have signed up for number 5 and the Charity has given me number 5 to represent the 5 years of taking part in the walk for the charity.

The charity itself is based in Arundel West Sussex and is a hospice for children with life limiting conditions. I feel very humbled to be associated with this charity, there is very little sponsorship so events like the forthcoming Midnight Walk on May 17 is one that I’m looking forward to.

The walk is 10 miles, although there is a shorter walk of 4 miles and is lovely, a walk along the seafront and around the Sovereign Harbour, then out to Holywell and then finishing at the Sovereign Centre where the start of the walk takes place

This years Night to Remember takes place on May16/17, its a lovely walk around Sovereign Harbour in Eastbourne, then ou to Holywell and then finishing at the Sovereign Centre in the early hours of Sunday morning. The Charity is hoping that 1000 ladies will take part in the 2015 Midnight Walk, all monies raised will go straight to the Charity and unlike some won’t be swallowed up by admin costs.

Just for something different


As you can see there is a new cake combination, which is pineapple and lime. But what I’d like to share with you is my short crust pasties, freshly made and not your normal cheese and onion flavour, these are a combination of roasted vegetables and feta cheese, encased in pastry and cooked for 20 minutes or so.  They are light and crumbly and altogether different from the supermarket bought ones and also dairy free and suitable for vegetarian and non vegetarians as well.

The roasted vegetables included in the above are 2 different coloured courgettes, in this case, green and yellow, an onion, and pepper which were roasted for 45 minutes and then cooled until such times as they were needed for the pasties.  Of course any vegetable or fruit combination will do, the choice is endless and exciting.

This wonderfully warming soup/pasta is purely vegetarian, just for a change as it contains, potatoes, courgettes, an onion, plus pepper and pasta and a couple of Kallo vegetable stock cubes have been added to enhance the flavour. I can also add that no salt was added as the stock cube contained celery salt  so adding any further would be silly.

Although the day was over cast and I was unsure what to have for dinner, this seemed the option to have, plus I can add further vegetables tomorrow as I made enough to last 2 or  days.

Adding the stock cube, which ever flavour would suit, whether it be vegetable or tomato and herb, just adding them has given the dish a whole different and wonderful flavour.

Don’t be afraid to use vegetables you wouldn’t normally use, as this adds to the dish and discovery of what you have made
